Launched in the spring of 2022, Shethar St Patisserie is the brainchild of chef Vern Puglisi. After decades spent as a pastry chef creating culinary favorites for some of the country's top restaurants and clubs, Puglisi returned to Western New York, settling in the Finger Lakes. The Patisserie allows him the freedom to create with locally-sourced and seasonal ingredients and showcase daily the fresh-baked croissants, cinnamon rolls, and decadent desserts for which he is known.
As a professional pastry chef, Vern has dedicated the majority of his life to baking for the best clubs and restaurants spanning both coasts. He graduated from Johnson & Wales University, well-known for its culinary arts, business and hospitality programs and began his working life in major metropolitan cities in Illinois, California, New York, North Carolina and Florida. He recently returned home to Western New York and the Finger Lakes.
Having his own kitchen at his Hammondsport patisserie allows Vern the ability to blend his education and experience while experimenting with the culinary creative process. The results and reviews speak for themselves.
Vern loves working his favorite type of pastry, Viennoiserie, a category of pastry distinguished by its rich, sweet dough and grab-and-go style. The patisserie allows Vern the creative ability to bake this pastry into a variety of innovative breakfast and brunch treats such as chocolate and almond croissants, savory spinach and feta croissants and bacon, egg and cheese breakfasts folds.
While cinnamon rolls and Danish, renown for their large size and sweet bite, are a customer favorite, the Shethar Street Patisserie serves rotating menu of Viennoiserie. Customers can depend on finding their favorite croissants fresh-baked each day, as well a collection of unique treats created as Vern works through night to fill the cases each morning.
